A Collio calling card, this is pink Pinot Grigio, aka Pinot Grigio Ramato, 100% PG with 3 weeks of skin contact, lending body, structure, and yes, hue, to the wine. Dejan’s is spontaneously fermented, unfined, unfiltered, and aged for 3 years in Slavonian oak barrels. Moving well past ‘copper’ to a lovely shade of ruby red grapefruit, its visual intensity is matched by  a kaleidoscopic range of aromas and flavors: rose petals, rhubarb, blood orange, bee pollen, tomato leaf, dried basil.
