Derived from the very early, gentle pressings of Pinot Noir grapes, with the freely running juice 'bled' from the tanks after only a day of maceration, then aged in used barriques. 54 months sure lie.  Uninhibited by any addition of dosage and hemmed together with a soft touch of tannin and marked salinity, on the palate it is sleek and fine, with pronounced freshness and a creamy bubble. Reeling with wild strawberries, red flowers, custard and dry pastry, this is a sparkling wine of substance and elegance.
